The Taco Truck That Sells Out by Noon

Don Memo's red truck appears on Pulaski Road at 7 AM sharp, and by noon, the birria is gone. I've learned to show up at 8 AM to beat the construction workers who constitute his most loyal clientele.

The birria tacos are dipped in consome before hitting the griddle, which means the tortilla absorbs all that beefy, chile-infused goodness before it crisps up. The result is a taco that's simultaneously crunchy, juicy, rich, and bright with lime and onion.

The quesabirria is the premium option — same birria, but with a blanket of Oaxacan cheese that stretches for days. But honestly, the real star is the consome itself. A cup of Don Memo's consome on a cold Chicago morning is better than any fancy bone broth at any bougie café.
